My husband and I discovered this amazing vegetable when we lived in India for 4 months. We were told by locals that they eat Bitter Melon to regulate blood sugar levels. I wanted to investigate the protentional properties of this vegetable and went to Google Scholar for my research. Listed below under Properties and Actions, I never knew that this is a supper veggie. Our family eat Bitter Melon on a daily basis. We have pickled, stir fried, baked, soups, and made chips out of them.
